Dale’s Slow-Roasted Citrus Salmon

Ingredients
  • 2filets salmon
  • 1 cup Frescolio Lemon Infused EVOO
  • 1 lemonthinly sliced into rounds
  • 1 limethinly sliced into rounds
  • 1 orangethinly sliced into rounds
  • saltto taste
  • pepperto taste
Instructions
  1. Heat oven to 300 F. Line a sheet pan with heavy duty aluminum foil, and top this with a layer of parchment paper (this will make clean-up a breeze).
  2. Place salmon on sheet pan and season with salt and pepper.
  3. Layer the citrus fruit slices on the salmon, alternating the colours.
  4. Drizzle everything with Lemon EVOO and bake until salmon is just turning opaque around the edges and is nearly cooked through, 25 to 35 minutes. (Recommended to cook to 145°F.)
Recipe Notes

Varying colours of fruit enhance the presentation of this dish, so get some blood oranges if they’re in season!
