  1. Whisk the dressing ingredients into a salad bowl.
  2. Wash and dry the cucumbers. Into the same bowl, peel long strips from the cucumber, turning as you go until you reach the seeds. Discard the core of seeds. Toss with dressing.
  3. Chill for an hour. Serve in small bowls.
