Cilantro “Green Goddess” Dressing
This makes a great summer salad dressing, veggie dip, or as a sauce on fish and shrimp!

  • 1bunch fresh cilantro
  • 1package fresh chives
  • 2cloves raw garlic
  • 1lime juice only
  • 1/4cup Frescolio Persian Lime Infused EVOO
  • 2/3cup plain Greek yogurt(vegan option: use a whole avocado)
  • salt to taste
  1. Pick cilantro leaves of stems and dump in your food processor or blender. Add chives, garlic, lime juice and olive oil. Pulse until the consistency resembles pesto. Add Greek yogurt or avocado and blend until combined. Salt to taste.
Recipe Notes

This recipe makes a fairly thick dressing, if you want something less viscous, add more oil. It is also easy to modify; substitute the cilantro for dill or basil for a different flavour.

Instead of the Persian Lime EVOO, try this recipe with one of the following:
