Chilled Cucumber Soup with Smoked Sea Salt

  • 1 English cucumberpeeled and seeded
  • 5oz sour cream
  • 4oz chicken or vegetable brothuse vegetable broth for vegetarian option
  • 1 1/2tsp garlic purée
  • 1 1/2tsp dill purée
  • 1 1/2tsp Frescolio Sicilian Lemon White Balsamic Vinegar

  • sea salt
  1. Roughly chop the cucumber and place in a deep bowl.
  2. Add sour cream, chicken broth, garlic pureé, dill purée, balsamic vinegar, salt, and pepper.
  3. Purée using immersion blender, until semi smooth. Chill.
  4. Once chilled, place in a cup or bowl. Garnish with a drizzle of olive-oil and smoked sea salt.
