Ingredients
  • 1 lb heirloom or roma tomatoes
  • 1/3 cup Frescolio Varietal EVOO the more peppery & fruity, the better
  • 1/4 cup Frescolio Santorini Oregano White Balsamic
  • 2 tbsp fresh basil thinly sliced
  • 8 oz mozzarella fresca drained (or bocconcini)
  • sea salt to taste
  • pepper to taste

Instructions
  1. Arrange sliced tomatoes on a platter. Sprinkle with salt and pepper. Whisk balsamic vinegar and EVOO together. Place a slice of mozzarella on each slice of tomato and sprinkle with basil slices. Drizzle with the vinaigrette and serve.
