Instructions
  1. Place the blueberries in a medium sauce pan over medium heat. Add 2 tablespoons of water, the lemon zest, and honey. Heat and simmer for approximately 2 minutes.
  2. Allow the mixture to cool slightly, and then add the yogurt and olive-oil, whisking until blended.
  3. When the mixture is at room temperature, portion into 12 paleta (or Popsicle) molds and freeze.
Recipe Notes

This recipe uses Frescolio's Lemon Infused EVOO. You could also try any of the following EVOOs for a different taste:
