  1. Cook bacon in a large, heavy skillet over medium heat.
  2. Add EVOO to the bacon and fat, and stir.
  3. Add cabbage, apple, and onion. Saute until cabbage is tender-crisp, about 6 minutes. Season with salt and pepper.
  4. Add balsamic vinegar, cook until liquid evaporates and cabbage is tender, about 10 minutes. Stir in honey, adjust seasoning to taste. Cover and keep warm until ready to serve.
