Ají Verde Latke Waffles
These savoury waffles can be used in breakfast, dinner, or as a side dish. Top with fried chicken for an entree, or serve with eggs and sausage for breakfast!

  • 2lbs baking potatoeswashed
  • 1large oniongrated
  • 2tsbp baking powder
  • 2tbsp Frescolio Ají Verde Agrumato EVOOplus more to grease waffle iron
  • 1/2cup all-purpose flour
  • 2tbsp all-purpose flour
  • 4large eggs
  • 1 1/2tsp salt
  • pepperto taste
  1. Heat oven to 350 F. Lightly oil a large baking sheet and set aside.
  2. Coarsely grate the potatoes by hand or on the disc of a food processor, transferring to a large bowl of cold water as grated. Soak potatoes 1 to 2 minutes after last batch is added to water, then drain well in a colander.
  3. Spread grated potatoes and onion on a kitchen towel and roll up jelly-roll style. Twist towel tightly to wring out as much liquid as possible.
  4. Transfer potato mixture to a bowl and stir in eggs, olive-oil, salt, pepper, baking powder, and flour.
  5. Heat your waffle iron to high heat and coat with olive-oil when hot. Heap some latke mixture on top and spread it into an even layer. Cook until deep golden brown, about 5 minutes. Transfer to a baking sheet and place in the oven to keep warm.
